Bubbly Banana Cake

What:  A cake made of banana, olive oil, wholemeal flour & brown sugar, and topped with nuts, such as almond flakes, pecans or walnuts.  Some prefer it without nuts.  There is an option with apples or yoghurt.  Another version uses white wine.

Price:  $22 (size of 9 x 6 inch).  Bubbly version with wine – $32.

Why it’s good:  Dairy free & butter-less.  Great for those who eat at irregular times, the banana is a balm for the stomach. The crunchy nuts add a zest to the moist cake.
